Changes.. and see you on Facebook !!

Dear all, I have been trying to maintain, update and post some news on this blog during the past months, year. The target was mainly to tell you all, friends and family, where I was and how the project was moving. We are now entering a new phase : the construction ... and the count down before the move to West Chester has started : we are sorting things, we'll be focusing on finding a place to live in September. The plans for the bakery are final and the equipment being selected. We are waiting for our visa.. __ MERCI à toutes et tous pour vos mots d'encouragement et votre intérêt, votre suivi qui m'a aidé à avancer..__

La Baguette Magique : official location !!!

GREAT NEWS : after weeks and months of research, travel, thinking, calculations, exchanges with realtor, attorney, architect... after ups and downs, hopes and fears, investigations... this is it : the lease was signed for La Baguette Magique which will be located @ 202 West Market Street WEST CHESTER PA 19382.

Right next to a public garage, in front of the Justice Court, close to St Agnes Church and SEPTA transportation... it will offer outside seating on the top of a great retail spot !

Insurance, permits, final work on plans, quotations, equipment selection, Visa application...

A MAJOR step into reality !

July 2014 update

It has been a long time since I last posted some news.. However, silence does not necessarily means inaction ! We have been busy preparing our move, sorting things, thinking about and working on the renting of our homes in France, selling, giving away... while continuing the prep work for la Baguette Magique .. - ITIN number obained ! (I am officially a US tax payer now !) - Business account opened for La Baguette Magique LLC - Beta version of the web site released for UATs

Working on the web-site and other communication supports...

She has always been passionate about this ancient and noble work. Certificate of Organization for La Baguette Magique

LLC stands for limited liability company, a business structure combining aspects of both corporations and partnerships.

A Pennsylvania LLC is created by filing a Certificate of Organization Domestic Limited Liability Company with the Department of State.

The certificate must include: the LLC's name and address; the name and address of the LLC’s registered agent; the name and address of each organizer of the LLC; whether the LLC will be run by a manager; and whether the LLC will provide professional services.

A limited liability company (LLC) offers protection from personal liability for business debts, just like a corporation. However, unlike a corporation, which must pay its own taxes, an LLC is a pass-through tax entity: The profits and losses of the business pass through to its owners, who report them on their personal tax returns just as they would if they owned a partnership or sole proprietorship. Moreover, while setting up an LLC is more difficult than creating a partnership or sole proprietorship, running one is significantly easier than running a corporation.

Internship at Lorraine Bakery, Lynchburg, VA

Lynchburg is an independent city in the Commonwealth of Virginia. As of the 2010 census, the population was 75,568. Located in the foothills of the Blue Ridge Mountains along the banks of the James River, Lynchburg is known as the "City of Seven Hills" or "The Hill City." Lynchburg was the only major city in Virginia that did not fall to the Union before the end of the American Civil War. (Wikipedia)

The Lynchburg Community Market is the third oldest farmer's market in the Country, having originally opened in 1783.

This is where Lorraine Bakery is and where I have been welcomed by Petra and Steve who run and own the business.

All their products (all fresh, baked daily with high quality ingredients, care and passion !) are prepared on site and sold from Tuesday to Saturday in the market.

Saturday being THE big day of the week with all the vendors being here.

During the Summer, their delicious products can be found on other markets in the area...

A great experience and my thanks and gratitude, admiration and respect : Merci Petra and Steve, for your trust, everything you shared and explained to me.

Merci Alex et Eric : you truly are unique and it was a real pleasure to get to know you and work with you.

Early March in PA

... still cold... the snow we left when we went back to France end January has not melt yet, and there is more... cold and windy... I guess it is just to check our motivation and eargerness to move over here ! Diego came with us this time (Spring break at school) and he is spending his stay with a French-American family, close to Lancaster

... currently working on a proposed lease for a possible location for the Bakery... what a headhake ! I am glad the attorney is taking care of all the wording and is advising me..

Immigration : our file being scrutinized.

Products and project..

Here we are... almost at the end of the month, and already packing for the upcoming trip to PA and VA ! I will be away for 5 weeks with a well balanced agenda : 2weeks in PA : West Chester and Philadelphia for La Baguette Magique 2weeks in VA : Lynchburg, baking at Lorraine Bakery and a couple of extra days to attend a bakery show in Atlantic City.

Before I leave, just sharing a couple of products made at home (the brioche & chocolate chips twists) and at Victor during my last week as an intern...

Retour et suite..

2 février 2014 : c'est la chandeleur, c'est également le retour après 3 semaines aux US. Les 2 semaines chez Amy's Bread ont été suivies d'une semaine de prospection et rendez-vous en Pennsylvanie, entre West Chester et Philadelphie.. Le projet avance et prend une forme de plus en plus précise ... local, banque et financement, assurances, école pour Diego, logement, marketing, fournisseurs, et bien-sûr immigration.. Février sera en France, avec une semaine à nouveau chez Victor, à L'Arbresle !

Mars sera aux US... Pennsylvanie du 1er au 13, avec l'espoir de concrétiser, comme prévu, le choix du local pour La Baguette Magique

Lynchburg, Virginie, pour 2 semaines chez Lorraine Bakery et de nouvelles découvertes, pratiques...

Internship at Amy's Bread, NYC, USA

Mardi 14 janvier, au matin, pluie fine sur le Queens.

RDV à 10h30 avec David le chef boulanger de chez Amy's bread. Une véritable usine de production, divisée et organisée en secteurs bien séparés, en équipes qui tournent H24 pour livrer 3 magasins, et autres restaurants et clients.. David supervise la boulangerie seulement (tout de même 50 personnes !) : il y a aussi la viennoiserie, et la pâtisserie! David est gentil, souriant, bienveillant. Il me présente à Amy (the Boss) dont le planning est bien chargé mais qui prend le temps d'un welcome et que je reverrai.

Je passerai mes 2 premiers jours avec l'équipe 'façonnage' des pains spéciaux : du façonnage de 11h à 19h (les pâtes sont préparées par une autre équipe, puis cuites par une autre équipe à nouveau, puis emballées pour être expédiées dans les boutiques ou chez les clients par une nouvelle équipe) : le tout avec un planning et une gestion d'usine, pour une fabrication qui reste entièrement manuelle et artisanale !

Suivront 3 jours avec l'équipe 'Baguettes', dédiée à la baguette uniquement : du façonnage à la cuisson, de 7h à 15h. Je verrai ainsi tout le cycle. Les températures, sans atteindre celles record des semaines précédentes sont en baisse, avec un vent qui rend l'attente sur les quais du métro aérien dans la nuit un peu frisquet... Le bonnet s'impose !

Dimanche : Jour de repos avant de commencer ma deuxième semaine.Grand soleil, belle lumière mais vent glacial. Cap sur Chelsea Market dans Midtown Manhattan pour aller voir Amy's Bread, côté boutique. Le marché est plein de bonnes odeurs et beaux produits, bobos et touristes se bousculent. Je prends un café avec un collègue croisé en production et qui, aujourd'hui est en vitrine, affairé devant son four et la préparation de bretzels et pizzas. Il fait toujours beau et je décide de rejoindre Broadway à pied : je passe par Union Square, puis devant le Flat Iron Builing, traverse le Fashion District pour rejoindre Times Square où je reprends le métro : j'aurai marché quelques 4 heures et je commence à avoir froid et sentir la fatigue.

Lundi 20 et mardi 21 : 2 jours avec l'équipe 'bio' : les pros du bio de 5h à 13h. Des pâtes plus souples et à manipuler avec plus douceur et de précautions. D'autres façonnages et lamage. Une dépose sur le tapis de cuisson tout en délicatesse. De très grosses pièces (plusieurs kilos, avec une cuisson de presque 1 h) et des miches individuelles couvertes de graines de tournesol, courge, lin, sésame (mon préféré).

Mercredi 22, je descends sur Manhattan (40 min de métro if everything goes well, car la neige et le blizzard sont arrivés) pour rejoindre la boutique de Chelsea Market où je ferai connaissance avec Robin, le manager. Expérience de l'autre côté donc, côté mise en place, vente.. ce qui permettra de boucler la boucle

Jeudi 23 et vendredi 24, petit retour côté baguettes pour mes 2 derniers jours de stage...

Malgré le peu de temps passé ici, tout le monde a été formidablement accueillant et a joué le jeu de me montrer, m'expliquer, m'accompagner..

En route dans cette nouvelle année... Après la période des fêtes qui marque une pause dans les activités -sauf chez les boulangers-pâtissiers !!!-, le chemin continue sur 2014 ! Des rendez-vous au programme cette semaine de rentrée, à Lyon (CCI Rhône-Alpes...) et préparatifs pour le prochain départ:

Il y avait des envies de couleurs, de saveurs, de sucre... on a donc préparé des Brioches Nanterre agrémentées de fruits confits pour l'une et de pralines pour l'autre... dégustation prévue pour le thé !

Architect : essential

I wanted to have an architect by my side to assist me with the design and construction of La Baguette Magique (production and retail). Choosing the right architect is key and I wanted this very early in the process as he will be on board (and has already ) to consult with when visitiong vaious properties.

One of the most important things for me was the skills & experience but also the chemistry between me and the architect. I wanted to feel comfortable with each other because we will be working closely together. I needed a 'good listener', genuinely interested in your needs.

Back in November, we met, discussed, then went for a tour of the city -where I could appreciate his knowledge and love for West Chester-, then for a visit of a few properties that I selected for La Baguette Magique, with the help of my realtor, Robin.

Now, things are moving forward... March is the target date for selecting THE PLACE !

Tarte à la praline

Une tarte très connue dans la région lyonnaise et préparée avec des pralines roses concassées. Très flashy avec sa couleur rouge rosée, mais très riche aussi. La réussite de cette tarte aux pralines réside dans le respect de la température que doit atteindre le mélange pralines + crème. Certains rajouteront des amandes concassées pour plus de craquant (j'ai ajouté des pignons de pin torréfiés)...

Une tarte tout en douceur et en couleur, crémeuse et gourmande !

La praline est un bonbon constitué par une amande enveloppée de sucre cuit, lequel peut être teinté et parfumé de diverses manières.
